Dough strip line
PANE MODULAR
with long resting time
The trend is toward soft, Mediterranean dough with a coarse-pored crumb and a rustic crust. Our PANE MODULAR dough strip line combines the advantages of the PANE’s particularly gentle dough preparation with the modules of the MULTIROLL baking system for small bakery items. When operated by a single person, this opens up a wide range of possibilities for small-scale artisan bakeries and semi-industrial businesses. With a working width of 600 mm, the dough is prepared for square and round bread rolls, baguettes, ciabattas, and small loaves.
Production of Mediterranean baked goods in artisan quality
Our PANE MODULAR dough strip line allows for the gentle processing of bread and bread roll dough with long resting time, and thus supports a particularly high-quality dough development. It can be used to produce a wide variety of Mediterranean baked goods from square bread rolls and small loaves made from soft dough to baguettes, ciabatta, and other products.
Equipment of the PANE MODULAR
NEW: Now with a working width of 600 mm
The new PANE MODULAR combines the proven dough strip technology with the modular quick-change system on interchange trolleys from the range of the MULTIROLL bread roll system. This allows for the flexible use of moistening and seeding units, or of the conveyor belt on interchange trolleys. Automated depositing using the proofing board drawer pick-up function reduces manual effort to pick up trays and boards measuring 600 mm x 1,000 mm.

Integrated dough strip former
Fully automatic station for the stress-free preparation of dough strands, which are then formed into an endless dough strip.
- Suitable for a wide variety of dough, including soft dough (e.g. ciabatta)
- Plastic hopper with a dough holding capacity of approx. 160 kg
- Version with hopper spray oiling function
- Dough hopper loading via upstream bowl tipper or box lifter (option)
- Dough portioning using divider stars
- 2 flour dusters, positioned at the beginning and end of the conveyor belt, respectively
The flow rate of the dough strip is monitored by photoelectric sensors and automatically regulated by the control system.
INUS touch panel
The line is easy and safe to operate via the INUS user interface. The small number of parameters that the operator needs to set reduces the risk of incorrect settings and increases production reliability. The display design is very simple, combining quick-start buttons with a high-resolution screen. This user interface offers maximum comfort for the operator during production.

Adjustable Relax S roller frame
The head machine comes equipped with a patented S-shaped roller frame with manual height adjustment via an adjustment wheel. This special station allows the operator to process all types of dough with the utmost care. The dough strand thickness is controlled by adjusting the rollers.

ACCURATOR 2.0
The WP KEMPER ACCURATOR 2.0 uses high-precision weighing technology to track the weight of the dough strand continually as it passes through the machine. This information is processed by the control system to adjust the length of the dough piece to be cut in such a way as to compensate for any differences in weight within the dough strand.
In synchronous operation with a constant hourly output (the main operating mode, e.g., for round products and when automatically placing items on trays or boards) the target weight is achieved by adjusting the conveyor belt speed. Alternatively, if the line is operated at a constant speed (e.g., for square products that are picked up by hand and processed further), the cutting times are varied.
The system is adjusted or calibrated for specific dough types via the INUS user interface, and this can only be done during continuous operation. When operated with the ACCURATOR, the line works with weight accuracy; otherwise, it operates with shape accuracy.
ALN-K depositing unit (from MULTIROLL range)
- Wide belt with adjustable belt drive and frequency converter
- Setting drive with setting pulse via photoelectric cell
- Slide-in proofing board drawer
Manually operated with interchangeable shelfs for holding Euro trays and boards with measuring up to 600 mm x 1,000 mm.

Proofing board drawer pick-up
Automated depositing using proofing board drawer pick-up. Supports ergonomic processes and reduces the amount of manual work required in day-to-day production.
Moistening and seeding in interchange with conveyor belt
Each on interchange trolley (from MULTIROLL range)
- Moistening and seeding module slid on mobile interchange trolley, can be interchanged with other quick-change modules
- Moistening is from below using a splash tube and from above using single-fluid nozzles
- Conveyor belts designed as wire mesh belts
- Interchangeable, slide-on seeding tanks with varying seeding vanes for fine, medium, and coarse seeding material
- Quick-change belt slid onto mobile interchange trolley; interchangeable with other quick-change modules (e.g. moistening and seeding)
- Quick-release fasteners are used to secure it in place
- To connect external options
- Length 1,000 mm
- Stainless steel construction
MULTIROLL modules
Modular quick-change system on interchange trolleys enables rapid changeover and use. The quick-change belt is slid into a mobile interchange trolley. It can be interchanged with a moistening and seeding module. Length 1,000 mm.
Moistening and seeding units

SOFT CUT chopping knife
The SOFT CUT chopping knife allows a particularly clean and precise cut. Thanks to its special blade geometry, the dough does not stick to the knife, ensuring clean and efficient dough processing.
