Automation
in baking
technology
Efficient baking technology is key to cost-effective baking processes delivering consistently high quality. Intelligent automation of ovens, loading systems, heat recovery, and software in bakeries helps reduce energy consumption, optimize processes, and systematically increase production capacity. We develop customized automation solutions that network your baking technology and render the entire baking process reliable, efficient, and future-proof.
We are solution provider for the automation of oven systems using deck ovens. Increased productivity – reduced complexity.
Automation using MATADOR deck oven and OBER loading system
Higher productivity using the same floor space, on the one hand, and less staff, on the other. An increasing number of medium-sized and semi-industrial bakeries, as well as those that continue to focus on artisan craftsmanship, invest in the automation of their production and baking processes. Unlike solutions from other providers, our OBER series loading and automation systems offer integrated control for deck ovens, loading technology, and all peripherals. This reduces complexities during installation, ongoing operation, and, above all, during maintenance work. In addition, the key production parameters are visualized using the digital WP BakeryControl production management software, and are therefore available at all times.
Configuration for Schwarz Bakery, Lindenberg
MATADOR production ovens and the OBER loading system
Maximum baking surface: 156 m2 with a floor space of 150 m2. Implemented using 3 MATADOR MDV towers of 12 decks each.
Configuration for an industrial customer in France
Two 12-deck MATADOR MDV production ovens with an industrial working width of 2 m with fully automatic OBER loading and unloading systems.
Our automation experts see themselves as comprehensive solution providers and project planning partners for fully automated baking processes. Starting with an analysis of demand and product range, planning also takes into account the branch structure and the balance between centralized and decentralized production. In addition to the operational and procedural requirements, the structural conditions must be assessed by the experts, and transformed into solutions. In many cases, it is required to plan, install, and commission the new system in existing production space, or embedded in upstream and downstream processes.
For optimal space utilization, our MATADOR deck oven is increasingly being installed in tower systems with up to twelve ovens. Our automation experts take care of the entire process from planning, construction and coordination of construction-related measures to commissioning.
The automated system, comprising feeding, conveying, loading, and baking modules, is controlled from a central control panel. Using our OBER loading and automation system, up to one metric ton of dough per hour can thus be processed in a maximum of 48 ovens in eight deck ovens.
The system optimizes production capacity based on the SIMATIC control, the WP BakeryControl digital production management system and the integrated recipe management feature. This minimizes standby times or downtimes when the ovens are not in use. The burners are installed on the rear, allowing the ovens to be serviced and maintained even while the loading system is in operation. This reduces downtimes to a minimum.
